Yummy Vegan Creamed Spinach

I am always looking for healthy ways to incorporate more leafy greens.

Cooking leafy greens makes the calcium and iron they contain more bioavailable by inactivating some of the oxalates that the greens contain. This is especially true of spinach which is quite high in oxalic acid.

This recipe is a great way to enjoy cooked spinach.
