Fall is my favorite time of year.  It brings cooler weather, beautiful leaves, all things pumpkin, and SOUP!  Sure, you can eat soup any time of the year, but there is just something about soup in the fall and winter that feels so nourishing.  It doesn’t have to be fancy, and most of all, there ar usually plenty for leftovers.

One of my favorites is Zuppa Toscana, which has many variations.  My sister-in-law served this last week at a family dinner with some delicious multigrain bread.  Here’s one of my favorite recipes for Zuppa Toscana, which also happens to be gluten and dairy free.  I also recommend substituting the potatoes with cauliflower for a lower carb option.  Enjoy!
