
30 Jun Dr. Hagglund’s review of Kid-friendly Veggie Loaded Tacos
As a mom of two young boys, I am always searching for ways to incorporate more vegetables into their diets. These veggie-loaded tacos were a big hit with both of the boys AND my husband, who is a kid at heart! The veggies included in this recipe were bell peppers, onions, cabbage, carrots, and spinach, and that’s just in the taco meat. We also added lettuce, salsa, and avocado on the tacos.
It’s amazing what a food processor and some taco seasoning can do! My 3-year-old helped me load all the veggies into the food processor so that everything in the “meat” was the same consistency. I admit I had a bit of a eureka moment while making this as I realized that not only would adding tons of veggies in this way work for tacos, but spaghetti, lasagna, chili… you name it! In addition to the veggies mentioned above, you could also use zucchini, mushrooms, celery, tomatoes, or whatever is in season. Don’t eat meat? This would work just as well with a plant-based ground beef alternative.
It’s no secret that most kids (and adults for that matter) aren’t getting nearly the recommended five servings of vegetables per day. I usually already have one of the meals listed above included in our weekly rotation, so it is totally doable to just add more veggies to it in this way. My kids really loved it and barely noticed the difference, which always makes meal times more enjoyable for everyone at the table. Try it out and let me know what you think.
